Why freshly roasted coffee only tastes good after a week: degassing, carbon dioxide, the valve in the bag, the ideal window for filter and espresso, and what the roast date really means.

Fresher is better, that is the rule for almost every food. With coffee it is only half true. Straight out of the roaster a bean is not finished yet. It has to rest first.
What degassing means
During roasting, carbon dioxide forms inside the bean, around one percent of its weight, trapped in the porous cells. After the roast it escapes slowly. Around 70 percent leaves in the first 24 hours, the rest over weeks. That gas is why coffee swells in a pour over, the bloom, and why an espresso made from day fresh beans has a huge crema but runs restlessly and tastes flat. The gas gets in the way of the water entering the bean.
The window
- Day 0 to 3: Restless, gassy, often flat. Unsuitable for espresso; for filter it works with a long bloom.
- Day 4 to 10: Filter coffee turns clean and sweet. Espresso settles down from day seven.
- Day 10 to 35: The best window for everything. The aromas are fully developed and the gas no longer interferes.
- Week 5 to 8: Still good, but the fine volatile aromas fade. Espresso needs a finer grind.
- From week 8: Drinkable but flat. The oils start to oxidise.
The valve
This is why good coffee bags have a one way valve. It lets the carbon dioxide out so that the bag does not burst, and keeps oxygen out. Some roasters also flush the bag with nitrogen to displace the remaining oxygen. In a bag like that, unopened coffee keeps for many weeks with almost no loss. Once it is open, the clock is running.
The roast date
Supermarket coffee carries a best before date, usually one to two years after the roast. Freshness cannot be read from it. Small roasteries print the roast date, often as a day and month, sometimes as a batch number. Only with that can you plan the window. Without a roast date you are buying blind.
Ground coffee
Grinding increases the surface of the bean many times over, and the remaining carbon dioxide escapes within minutes, together with the most volatile aromas. Ground coffee is therefore always a compromise, no matter how freshly it was roasted. A grinder is the best investment in good coffee.
Common questions
How long does coffee need to rest after roasting?
Four to five days for filter coffee, seven to ten days for espresso. Light roasts tend to need longer.
Why does fresh coffee have so much crema?
Because the carbon dioxide from roasting is released during brewing. Plenty of crema is a sign of freshness, but not automatically of good taste.
How long does coffee keep after the roast date?
Whole beans taste very good for about five weeks and decent for up to eight. Ground coffee only for a few days.
