Storing coffee properly: freshness you can taste

Storing coffee without losing aroma: airtight, dark, cool, not in the fridge. Why the valve on the bag matters, what freezing achieves and how long beans and ground coffee really last.

Coffee is a fresh product that gets treated like a shelf stable one. From the roast date onwards it loses aroma, slowly as whole beans and very quickly as grounds. Take storage seriously and you get noticeably more flavour out of the same bag.

The four enemies

  • Oxygen oxidises the oils and makes coffee taste flat and rancid.
  • Light, above all UV light, speeds up that oxidation. Clear jars on the kitchen counter look good and are the worst choice.
  • Heat drives the volatile aromas out of the bean. The spot next to the hob or on top of the espresso machine is off limits.
  • Moisture makes the bean take on foreign smells. Coffee is porous and absorbs whatever it smells.

Why the bag has a valve

Freshly roasted coffee releases carbon dioxide for days. A one way valve lets that gas out but no oxygen in. That is why a good roaster bag with a valve, rolled up and closed with a clip, is often better than a tin without a valve. If you decant, use a lightproof container and keep it as full as possible, so that little air is left inside.

How long does coffee last?

Whole beans are at their best between day seven and day 35 after the roast date. Before that they are still restless, afterwards they flatten out but stay drinkable for a long time. Ground coffee loses its finest aromas within 15 minutes and is noticeably weaker after a few days. The best before date on supermarket packs says nothing about freshness, only about shelf life.

Buying rule: Only buy packs with a roast date, and never more than you will drink in three to four weeks.

Fridge and freezer

The fridge is the wrong place: damp, full of smells, and every time you open it condensation lands on the cold beans. The freezer, on the other hand, works if you do it properly. Pack coffee airtight in weekly portions, freeze it and open a portion only once it has thawed. Never thaw a pack twice. Frozen coffee can even be ground straight from the freezer, which gives a slightly more even grind.

The container

The ideal container is lightproof, made of ceramic, stainless steel or dark glass, with a gasket. Containers with a vacuum pump, or with a lid that rests on the beans, keep the air to a minimum. More important than the material is that the container is only as large as the portion you are drinking right now.

Can you keep coffee in the fridge?

Better not. Moisture and foreign smells do more harm than the cold does good. The freezer is the better choice if you want to store it for longer.

How long does coffee last once opened?

Whole beans taste good for about four weeks, ground coffee only for a few days. Always close the pack airtight.

How do I recognise old coffee?

The beans look oily or dull and dry, there is barely any bloom or crema when you brew, and the taste is flat and slightly rancid.
